We do not have a Scottish office. Scotland-wide placements run through our Liverpool team and the live-in bench, with PVG compliance for regulated settings, full PAYE, and an honest serving model that we lay out below.

How we serve Scotland

The honest Scottish serving model

Scotland runs three distinct hospitality calendars that overlap across the year. The urban capital trade in Edinburgh runs year-round with August Fringe and December Hogmanay peaks. Glasgow's hospitality and event-venue trade runs steady year-round with TRNSMT, SEC, and stadium-tied surges. The Highland calendar runs to a different rhythm: 12 August grouse season opening, Speyside Whisky Festival May, Cairngorms ski season December to March, and country house wedding peaks May to October.

Chefs Bay does not have a physical Scottish office. We serve all of Scotland through a national live-in chef bench plus visiting chefs from our Liverpool and Manchester teams. Booking, compliance paperwork, and PVG / DBS verification all run from our Liverpool base. Drive times are honest: roughly 3.5 hours from Liverpool to Glasgow, 4 hours to Edinburgh, 6 hours to Inverness. Daily-commute coverage is not viable for any Scottish placement, which is why the live-in framing matters: chefs travel to Scottish venues with accommodation arranged for the duration of the booking and are paid travel-inclusive day rates including mileage and a living allowance.

Scotland uses PVG rather than DBS for protected adult and child work. Every chef we send into a Scottish care home, school, or nursery setting holds current PVG before the first shift. Chefs for hospitality, country house, sporting lodge, and distillery sites hold Right to Work, Level 2 Food Safety, and Allergen Awareness as a baseline, with PVG on request. All Chefs Bay workers are on full PAYE; no umbrella companies. We will open a Scottish office once Glasgow and Edinburgh booking volumes together justify it.

Scotland chef hire: common questions

Does Chefs Bay cover Scotland?

Yes. We cover Glasgow, Edinburgh, Inverness, the Scottish Highlands, Speyside, Aviemore and the Cairngorms, the Isle of Skye, Argyll and the West Coast, and the wider Scotland market through a national live-in chef bench plus visiting chefs from our Liverpool and Manchester teams. Booking and compliance run from our Liverpool office. We do not have a physical Scottish office yet, and we will be honest about that rather than fake one.

How is the Scottish coverage different from the rest of the UK?

Two operational differences. First, Scotland uses PVG (Protecting Vulnerable Groups) rather than DBS for protected adult and child work in care homes, schools, and nurseries; we hold the equivalent disclosure paperwork on every chef assigned to a Scottish regulated setting. Second, drive times from our nearest hub (Liverpool, ~3.5h to Glasgow, ~4h to Edinburgh, ~6h to Inverness) make daily-commute coverage impossible for most Scottish placements. The live-in bench plus Liverpool-run booking model is the operational standard.

Why do you not have a physical Scottish office?

Booking volume from Scotland is real but not yet large enough to justify the overhead of a permanent local team. Glasgow and Edinburgh together would need to sustain a level of monthly bookings that supports a Scottish office build-out. Until then, we run the operation honestly through Liverpool plus the live-in bench. We would rather be straight about the model than open a notional Scottish address with no actual chefs on the ground.

How does live-in chef cover work for Scottish placements?

For placements of four weeks or longer at Scottish hotels, country house hotels, sporting lodges, distillery hospitality, or Cairngorms ski lodges, we deploy chefs from our national bench who travel to Scotland with accommodation provided by you (lodge bunkroom, staff cottage, or estate accommodation) or arranged through us. The chef stays on site for the full booking, returns home between rotations, and is paid travel-inclusive day rates. This is the operational standard for the entire Scottish hospitality and sporting estate calendar.

What response times can I expect for Scottish placements?

For planned Glasgow or Edinburgh bookings of two weeks or more, we confirm a named chef inside 48 hours. For Highland and rural Scottish placements, planned bookings confirm inside 5 working days. We do not commit to same-day or 2-hour Scottish cover, because we do not hold a Scottish bench at the depth needed for that response window. For urgent Scottish cover, ring the booking line and we will tell you on the call what is realistic rather than promise and miss.

Are your Scottish chefs PAYE compliant?

All Chefs Bay workers are employed on full PAYE, including chefs deployed to Scottish placements. No umbrella companies, no self-employment workarounds. This matters for Scottish public-sector and contract catering clients who run IR35-equivalent checks on supplier compliance.

Do you cover Scotland-wide events like Speyside Whisky Festival, the Edinburgh Fringe, Royal Highland Show, or Cairngorms ski season?

Yes. Speyside Whisky Festival (May), Edinburgh Fringe (August), Royal Highland Show (June, Edinburgh), Cairngorms ski season (December to March), and the 12 August Highland sporting estate opening are all real use cases for the live-in bench. Operators booking 8-12 weeks ahead get the deepest pool. The August Fringe window is the most over-subscribed in our Scottish calendar; book by mid-April for the deepest bench.
